🍑 Spiced Honey Plum Clafoutis

Crafted with Wild Harvest Honey Farm’s Raw and Infused Honeys

YIELD: Makes 6–8 servings

🍽️ Ingredients:

  • 4 ripe plums, pitted and sliced into wedges

  • ⅓ cup + 3 tbsp Wild Harvest Honey – Vanilla, Lavender, Chamomile, or Raw

  • ¾ cup all-purpose flour

  • ½ tsp kosher salt

  • ½ tsp ground cardamom

  • ½ tsp cinnamon

  • ½ cup whole milk

  • ¼ cup sour cream or full-fat yogurt

  • 3 large eggs

  • 2 tbsp melted butter

  • 2 tsp vanilla extract

  • Extra honey for drizzling

👩‍🍳 Directions:

Prep the Fruit:

  1. Preheat broiler to high.

  2. Coat 6–8 ramekins (or use a small baking dish) with non-stick spray and set on a sheet pan.

  3. Divide plum wedges evenly between ramekins and drizzle with 3 tbsp of Wild Harvest Honey.

  4. Broil for 3 minutes, until plums are just softened. Remove from oven and reduce temperature to 375°F.

Make the Batter:

  1. In a medium bowl, whisk together milk, sour cream (or yogurt), eggs, melted butter, remaining ⅓ cup honey, and vanilla.

  2. Add in flour, salt, cardamom, and cinnamon. Whisk until smooth—some small lumps are okay.

Bake the Clafoutis:

  1. Pour batter over broiled plums, dividing evenly.

  2. Bake for 8–10 minutes, or until centers are set and a toothpick comes out clean.

  3. Let cool 10 minutes, drizzle with more Wild Harvest Honey, and serve warm. Optional: top with whipped cream!
