Honey Pumpkin Roll with Cream Cheese Filling

🍰 For the Pumpkin Cake:

  • ¾ cup all-purpose flour

  • ¾ tsp baking soda

  • ½ tsp baking powder

  • 2 tsp pumpkin pie spice

  • ½ tsp cinnamon

  • ¼ tsp salt

  • 3 eggs

  • 1 tsp vanilla extract

  • ⅓ cup Wild Harvest Honey – Vanilla, Pumpkin Spice, or Raw

  • ½ cup sugar

  • ⅔ cup pumpkin purée

🧁 For the Cream Cheese Filling:

  • 8 oz cream cheese

  • 6 tbsp unsalted butter, room temp

  • 1 tsp vanilla extract

  • 2 tbsp Wild Harvest Honey – try Cinnamon, Gingerbread, or Raw

  • 1 cup powdered sugar, sifted

  • Pinch of salt

👩‍🍳 Directions:
Bake the Cake:

  1. Preheat oven to 350°F. Line a 13x10" jelly roll pan with parchment paper, allowing 1" to hang over the short ends.

  2. In a bowl, whisk together flour, baking soda, baking powder, pumpkin pie spice, cinnamon, and salt.

  3. In another bowl, whisk eggs and sugar until fluffy. Add honey, vanilla, and pumpkin; whisk until just combined.

  4. Gently fold dry ingredients into wet using a spatula.

  5. Spread evenly into pan and bake for 12–14 minutes, until toothpick comes out clean.

Roll the Cake:

  1. Carefully lift parchment and cake out of pan onto a flat surface.

  2. Starting on a short end, gently roll the cake up (with parchment) into a log. Let cool on a wire rack.

Make the Filling:

  1. In a mixer, beat cream cheese and butter until smooth.

  2. Add vanilla, honey, powdered sugar, and salt. Beat until creamy.

Assemble the Pumpkin Roll:

  1. Unroll cooled cake and remove parchment.

  2. Spread cream cheese filling evenly, leaving a ½-inch border.

  3. Carefully re-roll cake into a log. Wrap in plastic wrap and refrigerate for at least 1 hour.

  4. Dust with powdered sugar before slicing and serving.
