🍰 For the Pumpkin Cake:

¾ cup all-purpose flour
-
¾ tsp baking soda
-
½ tsp baking powder
-
2 tsp pumpkin pie spice
-
½ tsp cinnamon
-
¼ tsp salt
-
3 eggs
-
1 tsp vanilla extract
-
⅓ cup Wild Harvest Honey – Vanilla, Pumpkin Spice, or Raw
-
½ cup sugar
-
⅔ cup pumpkin purée
🧁 For the Cream Cheese Filling:

8 oz cream cheese
-
6 tbsp unsalted butter, room temp
-
1 tsp vanilla extract
-
2 tbsp Wild Harvest Honey – try Cinnamon, Gingerbread, or Raw

1 cup powdered sugar, sifted

Pinch of salt
👩🍳 Directions:
Bake the Cake:
-
Preheat oven to 350°F. Line a 13x10" jelly roll pan with parchment paper, allowing 1" to hang over the short ends.

In a bowl, whisk together flour, baking soda, baking powder, pumpkin pie spice, cinnamon, and salt.

In another bowl, whisk eggs and sugar until fluffy. Add honey, vanilla, and pumpkin; whisk until just combined.

Gently fold dry ingredients into wet using a spatula.

Spread evenly into pan and bake for 12–14 minutes, until toothpick comes out clean.
Roll the Cake:

Carefully lift parchment and cake out of pan onto a flat surface.

Starting on a short end, gently roll the cake up (with parchment) into a log. Let cool on a wire rack.
Make the Filling:

In a mixer, beat cream cheese and butter until smooth.

Add vanilla, honey, powdered sugar, and salt. Beat until creamy.
Assemble the Pumpkin Roll:

Unroll cooled cake and remove parchment.

Spread cream cheese filling evenly, leaving a ½-inch border.

Carefully re-roll cake into a log. Wrap in plastic wrap and refrigerate for at least 1 hour.

Dust with powdered sugar before slicing and serving.
