Espresso Honey Whoopie Pies with Salted Caramel Filling

Rich chocolate-espresso whoopie pies sandwiched with a fluffy, salted caramel buttercream—made even better with Wild Harvest Honey. Try it with Brownie Explosion, Espresso, Vanilla, or Raw Honey for the perfect bite of farmhouse decadence.
🍪 For the Whoopie Pies:

  • 1 tbsp espresso powder, dissolved in 1 tbsp hot water

  • 1 stick salted butter, room temperature

  • ¾ cup sugar

  • ½ cup Wild Harvest Honey – try Espresso, Brownie Explosion, or Raw Honey

  • 2¾ cups flour

  • ¼ cup cocoa powder

  • ½ tsp kosher salt

  • 1 egg

  • ¾ tsp baking soda, dissolved in ½ tsp apple cider vinegar

  • ¼ cup milk

  • 2 tsp vanilla extract

  • 2 tsp chocolate extract

🍮 For the Salted Caramel Filling:

  • 1 cup light brown sugar

  • ½ cup salted butter, room temperature

  • ¼ cup half-and-half (plus more if needed)

  • 1 tsp vanilla extract

  • ½ tsp sea salt

  • 2¾ cups powdered sugar

  • Extra powdered sugar for dusting

👩‍🍳 Directions:
Make the Whoopie Pies:

  1. Preheat oven to 325°F and line 3 baking sheets with parchment.

  2. In a stand mixer, blend dissolved espresso, butter, sugar, and Wild Harvest Honey until smooth.

  3. In a separate bowl, whisk flour, cocoa, and salt.

  4. Add egg, vinegar-dissolved baking soda, milk, vanilla, and chocolate extracts to the honey mixture. Stir to combine.

  5. Gradually add dry ingredients to the wet, mixing until fully incorporated.

  6. Scoop 2 tbsp mounds of dough onto baking sheets, spaced 1½” apart.

  7. Bake 10–12 minutes until set but soft to the touch.

Make the Filling:

  1. In a mixing bowl, beat brown sugar and butter until light and fluffy.

  2. Add half-and-half, vanilla, and sea salt.

  3. Gradually mix in powdered sugar until smooth. Add extra half-and-half 1 tbsp at a time if needed.

  4. Transfer filling to a piping bag with a ½" round tip.

Assemble the Whoopie Pies:

  1. Pipe a dollop of filling onto half of the cookie bottoms.

  2. Top with the remaining cookies and press gently to spread filling.

  3. Chill for 1 hour (or up to 3 days) before serving. Dust with powdered sugar, if desired.
