🍫 Espresso Honey Whoopie Pies with Salted Caramel Filling

YIELD: Makes 15 whoopie pies

🍪 For the Whoopie Pies:

1 tbsp espresso powder, dissolved in 1 tbsp hot water

1 stick salted butter, room temperature
-
¾ cup sugar
-
½ cup Wild Harvest Honey – try Espresso, Brownie Explosion, or Raw Honey
-
2¾ cups flour
-
¼ cup cocoa powder
-
½ tsp kosher salt
-
1 egg
-
¾ tsp baking soda, dissolved in ½ tsp apple cider vinegar
-
¼ cup milk
-
2 tsp vanilla extract
-
2 tsp chocolate extract
🍮 For the Salted Caramel Filling:
-
1 cup light brown sugar
-
½ cup salted butter, room temperature
-
¼ cup half-and-half (plus more if needed)
-
1 tsp vanilla extract
-
½ tsp sea salt
-
2¾ cups powdered sugar
-
Extra powdered sugar for dusting
👩🍳 Directions:
Make the Whoopie Pies:

Preheat oven to 325°F and line 3 baking sheets with parchment.

In a stand mixer, blend dissolved espresso, butter, sugar, and Wild Harvest Honey until smooth.

In a separate bowl, whisk flour, cocoa, and salt.
-
Add egg, vinegar-dissolved baking soda, milk, vanilla, and chocolate extracts to the honey mixture. Stir to combine.

Gradually add dry ingredients to the wet, mixing until fully incorporated.

Scoop 2 tbsp mounds of dough onto baking sheets, spaced 1½” apart.

Bake 10–12 minutes until set but soft to the touch.
Make the Filling:

In a mixing bowl, beat brown sugar and butter until light and fluffy.

Add half-and-half, vanilla, and sea salt.
-
Gradually mix in powdered sugar until smooth. Add extra half-and-half 1 tbsp at a time if needed.

Transfer filling to a piping bag with a ½" round tip.
Assemble the Whoopie Pies:

Pipe a dollop of filling onto half of the cookie bottoms.

Top with the remaining cookies and press gently to spread filling.

Chill for 1 hour (or up to 3 days) before serving. Dust with powdered sugar, if desired.
