🍯 Honey-Brined, Creole Mustard Glazed Pork Chop

YIELD: Serves 4–6
🧂 Salt & Honey Brine:

3/4 cup kosher salt
-
1/2 cup Wild Harvest Honey – recommended: Bourbon, Brownie Explosion, Cinnamon, or Wild Harvest Raw Honey

1 cup hot water
-
3 cups cold water
-
4 bone-in, double-cut pork chops (12–14 oz each)
🍖 Creole Mustard Glaze:
-
1/4 cup Creole mustard (like Zatarain’s)
-
1/4 cup Wild Harvest Honey – same as above or mix it up!
-
2 tbsp water (divided)
-
2 tbsp olive oil
🔥 Directions:
Step 1: Brine the Pork
-
In a large container, whisk salt, honey, and hot water until dissolved.

Stir in cold water and submerge pork chops.
-
Cover and refrigerate for 6–8 hours.
Step 2: Prepare the Glaze

In a small bowl, mix Creole mustard, honey, and 1 tbsp water. Reserve.
Step 3: Sear and Roast
-
Preheat oven to 375°F.
-
Remove pork chops from brine, rinse under cold water, and pat dry.

Heat olive oil in a cast iron skillet over high heat.

Sear pork chops for 2 minutes on one side. Flip, brush with glaze, and transfer skillet to the oven.

Roast for 15–20 minutes or until internal temperature reaches 155°F.

Remove chops, place glazed side down on a cutting board, and let rest.
Step 4: Finish the Glaze

Place skillet back over low heat. Add remaining glaze and 1 tbsp water.

Scrape the bottom to loosen browned bits and stir until glaze thickens slightly.
To Serve:
Slice pork chops into 5–6 pieces each. Fan out on plates and drizzle with warm glaze.
