Honey-Brined, Creole Mustard Glazed Pork Chop

🍯 Honey-Brined, Creole Mustard Glazed Pork Chop

Made with Wild Harvest Honey Farm’s Raw and Infused Honeys

YIELD: Serves 4–6

🧂 Salt & Honey Brine:

  • 3/4 cup kosher salt

  • 1/2 cup Wild Harvest Honey – recommended: Bourbon, Brownie Explosion, Cinnamon, or Wild Harvest Raw Honey

  • 1 cup hot water

  • 3 cups cold water

  • 4 bone-in, double-cut pork chops (12–14 oz each)

🍖 Creole Mustard Glaze:

  • 1/4 cup Creole mustard (like Zatarain’s)

  • 1/4 cup Wild Harvest Honey – same as above or mix it up!

  • 2 tbsp water (divided)

  • 2 tbsp olive oil

🔥 Directions:

Step 1: Brine the Pork

  1. In a large container, whisk salt, honey, and hot water until dissolved.

  2. Stir in cold water and submerge pork chops.

  3. Cover and refrigerate for 6–8 hours.

Step 2: Prepare the Glaze

  1. In a small bowl, mix Creole mustard, honey, and 1 tbsp water. Reserve.

Step 3: Sear and Roast

  1. Preheat oven to 375°F.

  2. Remove pork chops from brine, rinse under cold water, and pat dry.

  3. Heat olive oil in a cast iron skillet over high heat.

  4. Sear pork chops for 2 minutes on one side. Flip, brush with glaze, and transfer skillet to the oven.

  5. Roast for 15–20 minutes or until internal temperature reaches 155°F.

  6. Remove chops, place glazed side down on a cutting board, and let rest.

Step 4: Finish the Glaze

  1. Place skillet back over low heat. Add remaining glaze and 1 tbsp water.

  2. Scrape the bottom to loosen browned bits and stir until glaze thickens slightly.

To Serve:
Slice pork chops into 5–6 pieces each. Fan out on plates and drizzle with warm glaze.
