Honey & Ale Braised Bratwurst Sandwich

🍺 Honey & Ale Braised Bratwurst Sandwich
Made with Wild Harvest Honey Farm’s Raw and Infused Honeys
YIELD: Makes 12 sandwiches
🌿 Braised Bratwurst Ingredients:

4 fresh bratwurst

1 quart local ale
-
2 cups Wild Harvest Honey – try Bourbon, Brownie Explosion, Apple Spice, Carolina Reaper, or Wild Harvest Raw Honey

1 fresh mango, roughly chopped
-
1 yellow onion, roughly chopped
-
5 garlic cloves, smashed
-
3 sprigs fresh thyme
-
2 cups chicken stock
🥬 Slaw Ingredients:

1/2 head napa cabbage, thinly sliced
-
1/2 head savoy cabbage, thinly sliced
-
1 red apple, matchstick cut
-
1/2 red onion, thinly sliced
-
2 serrano chiles, thinly sliced
-
1/4 cup apple cider vinegar
-
1/4 cup grain mustard
🥖 Sandwich Assembly:

12 soft fresh rolls, lightly toasted
-
Optional sides: chips, fruit, or tangy pickles
🔥 Directions:
To Braise the Brats:

Preheat oven to 280°F.

In a roasting pan or deep oven-safe dish, layer chopped mango, garlic, and onion.

Sear bratwursts in a skillet until browned, then place them on top of the fruit and aromatics.

Pour in ale, chicken stock, and Wild Harvest Honey. Cover with parchment and cut a few small slits for venting.

Braise for 2.5 hours, then let cool. Brats will be ultra-tender and flavorful.
To Make the Slaw:

In a large mixing bowl, combine cabbage, apple, red onion, and serrano peppers.

Add apple cider vinegar and grain mustard. Gently toss until coated. Chill until ready to serve.
To Build the Sandwich:

Toast your rolls.

Place one bratwurst on each bun and top generously with the slaw.
