HONEY BBQ PULLED CHICKEN ON BUTTERMILK BISCUITS

🍯 Honey BBQ Pulled Chicken on Buttermilk Biscuits

🍗 Ingredients:

1/2 cup all-purpose flour

1 tbsp ground cumin
-
1 tbsp cayenne pepper

1 tsp ground black pepper
-
1 tsp chili powder
-
1 tsp garlic powder
-
1 tsp kosher salt
-
4 chicken legs
-
1/2 cup vegetable oil
-
4 cups Honey BBQ Sauce – made with Wild Harvest Honey: try Brownie Explosion, Bourbon, Carolina Reaper, Chipotle, or Wild Harvest Raw Honey

8 buttermilk biscuits, halved
🔥 Directions:

Preheat oven to 375°F.

In a shallow bowl, combine flour, cumin, cayenne, black pepper, chili powder, garlic powder, and salt. Dredge chicken legs in the flour mixture.

Heat a large cast iron skillet over medium-high and add oil. Place chicken skin-side down and brown well. Flip and cook for 2–3 minutes more.

Transfer skillet to the oven and bake for about 15 minutes, or until fully cooked.

While chicken bakes, heat a grill pan. Once chicken is done, transfer to a bowl and toss with 3 cups Honey BBQ Sauce. Grill skin-side down for 3–4 minutes until the sauce is sticky and slightly charred.

Cool, then pull chicken from the bones using a fork or your hands. Mix with remaining 1 cup BBQ sauce until well coated and shredded.

Slice biscuits in half and pile 1/4 cup of pulled chicken on each. Top with biscuit lids and serve warm.
