🍯 Honey’d Chicken Stir-Fry
Crafted with Wild Harvest Honey Farm’s Raw and Infused Honeys
YIELD: Serves 2
🌿 Ingredients:

6 oz chicken breast, sliced into 2½" x ½" strips

1/2 cup Honey of a Dressing, divided – made with Mango, Gingerbread, Espresso, or Wild Harvest Raw Honey
-
1 tbsp vegetable oil
-
1/2 cup sweet red peppers, thinly sliced
-
1/2 cup onion, thinly sliced
-
1/2 cup mushrooms, thinly sliced
-
4 quarts fresh spinach leaves, packed
-
1/4 cup radishes, thinly sliced
🍯 Honey of a Dressing (Suggested Blend):
Whisk together:

1/2 cup olive oil
-
1/4 cup Wild Harvest Honey
-
2 tbsp apple cider vinegar or rice vinegar
-
1 tsp Dijon mustard
-
Salt & pepper to taste
🔥 Directions:

Marinate chicken in 1/4 cup of the honey dressing for at least 2 hours or overnight in the refrigerator. Drain and reserve marinade.

Heat oil in a non-stick pan over medium-high heat. Add chicken and stir-fry until cooked through and juices run clear.

Add sliced peppers, onions, mushrooms, and reserved marinade. Stir-fry for 1 minute.

Add spinach and toss gently until just wilted. Add sliced radishes and toss again.

Serve hot, drizzled with the remaining honey dressing.
